I had not heard of Lahey’s Jim Lahey I am the Liquor Christmas shirt, sweater pizza dough prior to your question, but, as I have had a 30 plus year love affair with making pizza I took a look at his recipe and video and it appears quite viable to me. There are lots of snobs regarding pizza dough and they will defend to the death any aspect of it from the individual basic ingredients to technique, etc.. Only particular observations of note regarding the no-knead dough in question is the rise time of 18 hours. And that is not a bad thing at all, it just means that you have to plan ahead whereas a lot of people want instant or near-instant gratification. The dough looked to be a good one to me and I will look forward to trying it out! Do you know what the best currency is?

The bread that I make most often is the NYT No-Knead Bread as invented by Jim Lahey. It uses a cast-iron Dutch oven to bake in, which I have not included in the cost. The ingredients are pretty simple, just flour, water, yeast, and salt. The recipe calls for roughly one pound of flour. I use King Arthur’s Bread Flour, which I normally buy in 5lb bags and costs about $5. So, that’s about a dollar for flour.
